I won’t get into all the reasons why, but long story short, I don’t cook meat. When I tell people this they are usually pretty curious what I DO cook. Over the years I have accumulated some pretty amazing recipes that anyone and everyone will love. These are 10 of my very favorite, kid and husband approved meat-free recipes!

This is the easiest recipe. This is a go-to for me for a quick lunch or a late night snack.
Cauliflower Alfredo

My kids love this recipe. Especially when we add some pesto to the sauce for a little extra flavor. We usually cook our cauliflower in vegetable broth instead of water for a little extra flavor. For the kids I serve this over noodles, but the husband and I usually eat it over zucchini noodles made with a veggie spiralizer. We also make zucchini noodles to go with a quick home made marinara sauce too.
Creamy Tomato Orzo Soup

We often make this recipe the same week we make the cauliflower alfredo, and instead of yogurt to make it creamy, we add leftover cauliflower sauce.
One Pan Mexican Quinoa

This is another family favorite that we almost always have the ingredients on hand. My kids love to eat it like tortilla chip dip, my husband likes to make it a burrito, and I usually eat it alone or on top of lettuce.

We LOVE pizza, but we try to watch our carbs in our house. Cauliflower pizza crust is a fantastic way to endulge in pizza without the guilt. This recipe takes some time and effort to get it right, but its worth it.
